Directions

Step 1

Rinse the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.

Step 2

In a bowl, marinate the chicken with yogurt, garlic, ginger, cumin, coriander, and salt. Let it rest for at least 15 minutes.

Step 3

Heat ghee in a large pot. Add onions and sauté until golden brown. Remove half the onions and set aside.

Step 4

Add the marinated chicken to the pot and cook until the chicken is browned and cooked through.

Step 5

In another pot, boil 4 cups of water. Add soaked rice and cook until 70% done. Drain and layer over the chicken.

Step 6

Sprinkle saffron and mint over the rice. Cover the pot and cook on low heat for 15 minutes to steam.

Step 7

Garnish with the reserved onions before serving. Serve hot with raita and salad.
