Directions

Step 1

Rinse the rice thoroughly and soak it in water for 30 minutes. Drain and set aside.

In a large pot, heat oil and fry the sliced onions until golden brown. Remove half and set aside.

Add ginger and garlic paste to the pot, sauté for a minute, then add chicken pieces and cook until browned.

Add tomatoes, yogurt, cumin, coriander, garam masala, and salt.

Cook until the chicken is tender and the oil separates.

Step 6

In another pot, bring water to a boil. Add the soaked rice and cook until 70% done. Drain and layer over the chicken.

Step 7

Sprinkle saffron over the rice, cover tightly, and let it steam on low heat for 15 minutes. Garnish with fried onions and serve hot.
