Directions

Step 1

In a large bowl, marinate the chicken with yogurt, garlic paste, ginger paste, cumin, and coriander. Set aside for 30 minutes.

Step 2

Rinse the basmati rice thoroughly and soak in water for 20 minutes. Drain and set aside.

Step 3

Fry the sliced onions in a pan until golden brown. Remove half for garnishing and leave the rest in the pan.

Step 4

Add the marinated chicken to the pan with onions and cook until the chicken is tender.

Step 5

In a separate pot, bring water to a boil, add soaked rice, and cook until 70% done. Drain the rice.

Step 6

In a large pot, layer the cooked chicken and rice. Sprinkle with mint, saffron, and reserved fried onions. Cover and steam on low heat for 10-15 minutes.

Step 7

Serve hot, garnished with additional mint and onions, if desired.
