Directions

Step 1

Rinse the basmati rice thoroughly and soak in water for 30 minutes. Drain and set aside.

Step 2

Heat oil in a large pot. Add sliced onions and fry until golden brown. Remove half for garnishing.

Step 3

Add ginger paste, garlic paste, and chicken to the pot. Stir well and cook until the chicken is browned.

Step 4

Add chopped tomatoes, yogurt, cumin, coriander, garam masala, and salt. Cook until the oil separates from the mixture.

Step 5

Layer half of the cooked chicken mixture at the bottom of the pot. Spread half of the drained rice over it. Repeat the layering with remaining chicken and rice.

Step 6

Cover the pot tightly and cook on low heat for 20 minutes. Garnish with fried onions and fresh coriander before serving.
