Directions

Step 1

Rinse the rice under cold water until it runs clear. Soak for 30 minutes, then drain.

Step 2

In a large pot, bring water to a boil. Add salt and parboil the rice until 70% cooked. Drain and set aside.

Step 3

In another pot, heat oil and fry the onions until golden brown. Remove half and set aside for garnish.

Step 4

Add ginger, garlic, cardamom, cloves, and cumin to the onions. Stir well.

Step 5

Add chicken pieces and cook until they are browned on all sides.

Step 6

Mix in yogurt and saffron, then layer the parboiled rice over the chicken. Cover and cook on low heat for 20 minutes.
