Directions

Step 1

Rinse the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.

Step 2

In a large bowl, mix yogurt, garlic, ginger, cumin, coriander, garam masala, salt, and turmeric. Add chicken pieces and coat well. Marinate for 20 minutes.

Step 3

Fry onions in a pan until golden brown. Remove half for garnishing.

Step 4

Add marinated chicken to the pan with onions. Cook until chicken is tender and cooked through.

Step 5

In a separate pot, bring water to a boil. Add rice and cook until 70% done. Drain and set aside.

Step 6

Layer the cooked chicken and rice in a pot. Sprinkle saffron and reserved onions on top. Cover and cook on low heat for 15 minutes.

Step 7

Fluff the biryani gently before serving hot.
