Directions

Step 1

Rinse the basmati rice in cold water until the water runs clear. Soak it for 20 minutes, then drain.

Step 2

Heat oil in a large pan over medium heat. Add onions and sauté until golden brown. Remove half for garnishing.

Step 3

Add ginger, garlic, cumin, cardamom, and coriander to the pan. Stir and cook for 2 minutes until fragrant.

Step 4

Add chicken pieces and salt. Cook for 10 minutes, stirring occasionally, until chicken is browned.

Step 5

Add soaked rice to the pan with 3 cups of water. Bring to a boil, then reduce heat and cover. Cook for 15 minutes.

Step 6

Once the rice is cooked, fluff it with a fork.

Step 7

Garnish with the reserved onions, cilantro, and mint.
