Directions

Step 1

In a heavy-bottomed pan, pour the milk and bring it to a boil over medium heat.

Step 2

Lower the heat and simmer the milk until it reduces to about three-fourths of its original volume, stirring occasionally.

Step 3

Add jaggery to the warm milk and stir until fully dissolved. Let it cool to lukewarm temperature.

Step 4

Crush the cardamom pods and add to the milk mixture.

Step 5

Sprinkle a pinch of nutmeg for added aroma.

Step 6

Whisk the yogurt in a bowl until smooth and add it to the cooled milk mixture.

Step 7

Mix gently to combine everything without forming lumps.

Step 8

Pour the mixture into earthen pots or any serving bowls of choice.

Step 9

Cover and keep in a warm place for 6–8 hours or until set firmly.

Step 10

Once set, refrigerate the Mishti Doi for at least 2 hours before serving.

Step 11

Garnish with a few saffron strands before serving chilled.
