Directions

Step 1

Wash the rice thoroughly and soak it in water for 30 minutes. Boil water in a large pot, add salt, and cook the rice until it is about seventy percent done. Drain and set aside.

Step 2

Heat oil in a deep pan and add onion. Cook until golden. Add ginger and garlic, then mix in chicken, salt, cumin, cardamom, and clove. Cook until the chicken releases moisture and begins to tenderize.

Step 3

Add yogurt and cook on medium heat until the mixture thickens and oil separates slightly. Sprinkle lemon juice and allow the flavors to combine into a rich base.

Step 4

Layer partially cooked rice over the chicken mixture.

Mix saffron with milk and drizzle over the rice.

Step 6

Cover tightly to trap steam.

Step 7

Cook on very low heat for 25 to 30 minutes to allow dum steaming. Let it rest for 10 minutes before gently mixing. Serve warm to enjoy the delicate aroma and layered flavors.
