Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear. Soak the rice for 30 minutes.

Step 2

In a pot, bring water to a boil and add the soaked rice. Cook until 70% done.

Step 3

Drain and set aside.

Step 4

Marinate the chicken with yogurt, saffron, ginger, garlic, and poppy seeds for 1 hour.

Fry onions in a pan until golden brown. Remove half for garnishing.

Step 6

Add marinated chicken to the pan with onions. Cook until chicken is 80% done.

Step 7

Layer the rice over the chicken. Add fried onions, cumin, and cardamom. Cover and cook on low heat for 15 minutes.

Step 8

Garnish with remaining onions and serve hot.
