Directions

Step 1

Rinse the scallops under cold water and pat dry. Set aside.

Step 2

Peel and slice the lotus root thinly. Blanch in boiling water for 2 minutes and drain.

Step 3

In a bowl, mix soy sauce, sesame oil, salt, and pepper. Marinate scallops for 10 minutes.

Step 4

Heat a pan over medium heat and add a tablespoon of sesame oil. Add ginger and garlic, sauté until fragrant.

Step 5

Add scallops and cook for 3 minutes on each side.

Step 6

Remove and set aside.

Step 7

In the same pan, add lotus root and jasmine blossoms. Stir-fry for 2 minutes, then add scallops back and toss well.

Step 8

Garnish with sliced spring onions before serving.
