- garlic paste – 2 Tbsp
- ginger paste – 1 Tbsp

- coriander leaves – 1 Cup
- lemon juice – 2 Tbsp
- biryani masala – 3 Tbsp
- Saffron – 1 Tsp
- Milk – 0.25 Cup

Directions
Step 1
Wash and soak the rice for 30 minutes. Drain before cooking.
Step 2
In a bowl, marinate the mutton with yogurt, ginger paste, garlic paste, biryani masala, and lemon juice. Set aside for at least 1 hour.

Heat oil in a deep pan. Fry the onions until golden brown. Remove half for garnishing.

Add the marinated mutton to the remaining onions. Cook on medium heat until the meat is tender and the masala thickens.

Boil water with salt and whole spices. Add soaked rice and cook until 70% done. Drain the water.

In a heavy-bottomed pot, layer half the rice, then the mutton mixture, mint, coriander, fried onions, and remaining rice on top.

Warm milk and mix with saffron.

Pour over the top rice layer.

Seal the pot with dough or a tight-fitting lid. Cook on low flame (dum) for 25–30 minutes.

Let the biryani rest for 10 minutes before opening. Fluff gently with a fork.
