Originating in Korea, this dish features chewy and refreshing cold noodles tossed with a savory doenjang (fermented soybean paste) sauce, roasted sweet potatoes, and fresh kale. The nutty and umami-rich doenjang sauce pairs beautifully with the caramelized sweetness of the sweet potatoes and the slight bitterness of the kale, creating a well-balanced meal that’s both healthy and satisfying. Loved for its vibrant colors and wholesome ingredients, this dish is perfect for a light lunch or dinner, offering a taste of Korean comfort food with a nutritious twist.
