Directions

Step 1

Rinse the basmati rice until the water runs clear. Soak it in water for 30 minutes, then drain.

Step 2

Marinate the chicken with yogurt, ginger paste, garlic paste, cumin, coriander powder, garam masala, and salt. Let it rest for at least 30 minutes.

Step 3

In a large pot, heat oil and add sliced onions. Cook until golden brown. Remove half for garnishing.

Step 4

Add the marinated chicken to the pot with the remaining onions. Cook until the chicken is tender and the oil separates.

Step 5

In a separate pot, boil water with salt and a little oil. Add the soaked rice and cook until 70% done. Drain.

Step 6

Layer the partially cooked rice over the chicken. Sprinkle with coriander leaves and fried onions. Cover and cook on low heat for 20 minutes.
