Directions

Step 1

Soak chickpeas overnight in water. Drain and rinse before cooking.

Step 2

Pressure cook the chickpeas with salt and water until soft. Set aside.

Step 3

Heat oil in a pan and add cumin seeds. Let them splutter.

Step 4

Add chopped onions and sauté until golden brown.

Step 5

Mix in ginger paste and garlic paste. Cook for 2–3 minutes.

Add chopped tomatoes and cook until soft. Add coriander powder and fenugreek leaves.

Step 7

Stir in the boiled chickpeas and some of the cooking water. Simmer for 15 minutes.

Step 8

In a bowl, mix flour, yogurt, baking soda, and water to make a soft dough. Let it rest for 2 hours.

Step 9

Divide dough into equal balls.

Step 10

Roll out each ball into a disc.

Step 11

Deep fry until puffed and golden.

Step 12

Serve hot bhature with chole, sliced onions, and lemon wedges.
