Directions

Step 1

Roast the eggplants directly over an open flame or in the oven until the skin is charred and the inside is soft.

Step 2

Allow the eggplants to cool, then peel off the charred skin and mash the flesh using a fork or masher.

Step 3

Finely chop onions, tomatoes, garlic, and green chilies. Set them aside.

Step 4

Heat mustard oil in a pan until it starts to smoke. Add cumin seeds and let them splutter.

Add chopped onions and sauté until they turn golden brown.

Add chopped garlic and green chilies. Sauté for 2 minutes until fragrant.

Step 7

Add chopped tomatoes, salt, coriander powder, and cook until the tomatoes turn mushy and oil starts to separate.

Add the mashed eggplant to the tomato mixture.

Step 9

Mix well and cook for 10–12 minutes on low flame, stirring occasionally.

Step 10

Sprinkle kasuri methi and stir well to blend all the flavors.

Step 11

Garnish with chopped coriander (optional) and serve hot with roti, paratha, or rice.
