Directions

Step 1

Slice the eggplants into thick rounds and soak them in salted water for 10 minutes to remove bitterness.

Step 2

Heat oil in a pan. Add cumin, coriander, and mustard seeds.

Let them splutter for a few seconds.

Add chopped onion and sauté until golden brown. Add minced garlic and green chili, and cook for another minute.

Add the eggplants to the pan. Stir well to coat them with the spices, then cover and cook for 15 minutes.

Mix yogurt with tamarind paste and salt. Add this mixture to the eggplants and cook for another 10 minutes until the eggplants are tender.

Step 7

Garnish with fresh coriander leaves and serve hot with rice or bread.
