RAW MANGO CHILLI CHICKEN
Ingredients
400 grams boneless chicken leg, cut into 1½ inch pieces
2 medium raw mango, roughly chopped
4-5 green chillies
4-5 garlic cloves, peeled
½ inch ginger, chopped
2 medium onions, chopped
¼ bunch fresh coriander leaves
Salt to taste
2 tsps oil
1½ tsps cumin seeds
3-4 green chillies, slit
1½ tsps red chilli powder
½ tsp turmeric powder
¾ tsp coriander powder
½ tsp cumin powder
2 tbsps freshly chopped coriander leaves + for garnish
Method
1. In a blender jar, add raw mango, green chillies, garlic cloves, ginger, ¼ of the chopped onion, and a little water. Blend well. Add coriander leaves and blend to a smooth paste.
2. In a large bowl, add chicken pieces, salt, and the prepared paste. Marinate for 25-30 minutes.
3. Heat oil in a nonstick deep pan, 1 tsp cumin seeds, and let the seeds change colour. Add slit green chillies, sauté well.
4. Add remaining chopped onion, sauté till translucent. Add red chilli powder, turmeric powder, coriander powder, cumin powder, mix well and cook for 2-3 minutes.
5. Adjust salt and mix well. Add chopped coriander, and mix well.
6. Add the marinated chicken and mix well. Add ¾ cup water and adjust salt. Mix well, cover and cook till the chicken is done.
7. Garnish with chopped coriander and serve hot.
