Mt. Kisco Diner in New York makes a rainbow cookie cake, a bigger twist on the classic Italian dessert. Rainbow cookies originated in bakeries over 100 years ago. Raspberry jam is layered in between red, yellow, and green-colored almond-based sponge cakes. It is then covered in chocolate ganache. Is the cake version of this Italian classic too much?
