Marinated chicken cubes dipped in batter coated with panko crumbs and deep fried.

PERI PERI CHICKEN NUGGETS

Ingredients

250 grams boneless chicken, cut into medium size cubes
1 tablespoon powdered sugar
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon dried oregano
1 tablespoon smoked paprika
1 tablespoon red chilli flakes
Salt to taste
1 teaspoon cinnamon powder
1 tablespoon red chilli powder
Cornflour slurry as required
Panko crumbs for coating
Oil for deep-frying

Method

1. Mix together powdered sugar, onion powder, garlic powder, dried oregano, paprika, chilli flakes, salt, cinnamon powder and chilli powder in a bowl. Add chicken cubes and mix well.
2. Dip chicken pieces in slurry and coat with panko crumbs.
3. Heat sufficient oil in a kadai. Deep-fry chicken cubes till golden brown and crisp. Drain on absorbent paper.
4. Serve hot with tomato ketchup.
