Pasta with an extraordinary cauliflower sauce- loaded with bell peppers, broccoli and some flavourful seasoning is the perfect comfort food.
PASTA WITH CAULIFLOWER SAUCE
Ingredients
1½ cups boiled pasta
1 large cauliflower, cut into medium florets
1 tbsp olive oil + for drizzling
1½ tbsps finely chopped garlic
7-8 button mushrooms, sliced
1 cup mixed capsicum triangles
8-10 small florets of broccoli, blanched
Salt to taste
Crushed black peppercorns to taste
1½ tsps dried red chilli flakes + for garnish
3-4 thyme sprigs
Parsley sprig for garnish
Method
1. Heat sufficient water in a non-stick deep pan, add salt and allow the water to come to a boil.
2. Add cauliflower and cook till the done. Strain from the water and place them into cold water with ice cubes in it.
3. In a blender jar, strain and add the cooked cauliflower. Blend to a fine puree and set aside.
4. Heat oil in a non-stick pan, add garlic and sauté for 1 minute. Add mushrooms and mix well.
5. Add mixed capsicum triangles and sauté well. Cook for 1-2 minutes. Add broccoli and toss well.
6. Add salt, crushed black peppercorns and ½ tsp dried red chilli flakes, toss well. Add pasta, sauté well.
7. Add prepared puree, salt, remaining red chilli flakes and crushed black peppercorns, mix well and cook for 1 minute.
8. Add thyme and mix well. Cook for 1 minute and take it off the heat.
9. Transfer to a serving plate and drizzle olive oil. Garnish with dried red chilli flakes and parsley sprig. Serve hot.
