  1. Yes, Jhaal means hot/spicey in Bangla and Frezy may came from the Bangla word 'Forasi' means French. When the British rulers were trying to get a toehold in Bengal, their main competitors were the French. The French established their grip around Chandannagar. The Bengali cooks used to cook a dish for them which resembles the present day stir fry. To zing it a little, they used to add last night's left over spicy curry paste. I'm not sure, but I think that 'Jhaal+ Forasi' boiled down to 'Jalfrezi'. What do you think?

  2. Chef, is that tomato sauce ketchup? or is it a bit like an italian passata, you know, like pureed tinned tomatoes?
