Ingredients
1 kg. Chicken
400 gms. pulao Rice
250 gms. Tomatoes
250 gms. Onions
50 gms. Garlic
50 gms. National Ginger
50 gms. Green chillies
1 bunch Coriander leaves
2 gms. National Turmeric
3 gms. Cardamoms
3 gms. Cinnamon
3 gms. Cloves
150 gms. pure Ghee
20-25 gms. salt
Water as required
Clean and joint chicken. Put into a pressure cooker with half the water, turmeric and salt.
After pressure is built up, cook for 3 minutes. Cool and open.
Wash and drain rice. Grind together ginger and garlic.
Slice onions and quarter tomatoes.
Heat ghee, add whole garam masala. Add sliced onions and sauté.
Add ginger and garlic and fry for 10 minutes. Add tomatoes, whole green chillies and chopped coriander leaves.
Fry for another 10 mins. Add salt, add fried ingredients to chicken and add remaining water (hot).
Bring to a boil. Add rice and lime juice. Put lid on.
When steam starts escaping out, put weight on and cook for 10-12 minutes over slow fire.
Cool slightly, open and serve immediately.
