Flavourful Rissotto made with Quinoa, Brown Rice and Mushrooms

MUSHROOM QUINOA RISOTTO

Ingredients

½ cup quartered button mushrooms
¼ cup quinoa, soaked in water
2 tbsps brown rice, soaked in water
1 medium onion
1 tsp olive oil
1tbsp butter
1 tsp finely chopped garlic
½ cup white wine
2-3 cups vegetable stock
Salt to taste
Crushed peppercorns to taste
¼ cup grated processed cheese
2 tbsps fresh cream

Method

1. Finely chop onion.
2. Heat olive oil in a deep non-stick pan. Add butter, chopped onion and sauté till translucent. Add garlic and sauté further for half a minute. Add white wine and mix well. Add button mushrooms and soaked quinoa and mix well.
3. Add brown rice, 2 cups water and mix well. Cook for 5-7 minutes. Add vegetable stock, salt, crushed peppercorns and cook till the rice is done.
4. Add grated cheese and mix well. Add fresh cream and mix well. Cook till the water reduces to half.
5. Transfer in a serving platter and serve immediately.
