Mix Vegetable Kichri:
Ingredients:
Rice 2 cup
Boiled Green gram ¾ cup
Ginger garlic paste 1 tbsp
Whole all spice 1 tbsp
Boiled potatoes ¾ cup
Boiled peas ¾ cup
Carrot 1 cup
Chopped onion 1
Salt, chili, turmeric as required
Green coriander, green chilies as required
Tomatoes chopped 2
Bay leaf 1
Clarified butter ¾ cup
Ingredients for Chutney
Whole red chilies 6-7
Tomatoes 200 gm
White cumin 1 tsp
Garlic 4 cloves
Salt as required
Oil 2 tbsp
Method:
Soaked green gram and rice separately. Heat clarified butter all whole spice and bay leaf fry well. Add ginger garlic paste, salt, chili, turmeric and tomatoes cook well. Add potatoes, carrot and onion cook well. Add water. When it boils add rice and cook. Add green coriander and green chilies, simmer. For chutney grind red chili, tomatoes, salt, cumin and garlic with water. Heat oil fry chutney in it. Serve chutney with vegetable kichri
Daal Gosht:
Ingredients:
Mutton meat ½ kg
Chopped garlic ginger 1 tbsp
Chopped onion 1
Chopped boiled tomatoes 250 gm
Salt, chilies, turmeric as required
Whole all spice mixed 1 tbsp
Boiled gram lentil 2 cups
Boiled black gram ½ cup
Fennel ½ tsp
Clarified butter ½ cup
All spice powder ¾ tsp
Ingredients for Garnish:
Ginger for garnish
Green coriander, green chilies for garnish
Ingredients for Baghar:
Onion sliced 1
Curry leaves 3-4
Whole red chilies as required
White cumin as required
Clarified butter 4 tbsp
Method:
Heat clarified butter fry onion and ginger. Add tomatoes, salt, chili, turmeric and whole spice cook well. Add mutton meat cook for 5 minute and add enough amount of water to tender meat. Add boiled gram lentil, boiled black gram, all spice powder, fennel and water cook till done. Remove in a dish. For baghar add all ingredient in pan and prepare baghar. Garnish with green coriander and green chilies, serve.
