The Pulao with the most basic kitchen ingredients- Spinach, garlic and some aromatic spices is the perfect lunch option.
LASOONI PALAK PULAO
Ingredients
1½ cups basmati rice, soaked and drained
2 tbsps ghee
5-6 black peppercorns
½ inch cinnamon stick
3-4 cloves
2 green cardamoms
2 tbsps finely chopped garlic
Salt to taste
2 cups shredded spinach leaves
Burnt garlic for garnish
Fried spinach for garnish
Raita to serve
Method
1. Heat ghee in a non-stick deep pan, add black peppercorns, cinnamon, cloves, green cardamoms, and chopped garlic. Mix well and cook till it turns golden brown.
2. Add rice and mix well. Add salt, 2½ cups water and mix well. Cover and cook till rice is almost cooked.
3. Add spinach and lightly mix to combine. Cook for 1-2 minutes and take it off the heat.
4. Garnish with fried garlic and serve hot with raita.
