Khatti Masalay Dar Murghi:
Ingredients:
Chicken 1 kg
Salt to taste
Ginger garlic 1 tbsp
Onions 2
Yogurt 1 cup
Lemon juice 2 tbsp
Red chili powder 1 tbsp
Coriander powder 1 tbsp
Cumin (roasted, crushed) 1 tsp
Peanuts ½ cup
Garam masala powder 1 tsp
Cooking oil ½ cup
Method:
Grind onions. Then in a grinder add peanuts and grind well. Now whisk yogurt add grinded onion, ginger garlic, salt, red chili powder, coriander powder, roasted and crushed cumin. Mix well. Then add this mixture in the chicken and marinate for about half to one hour in a fridge. Now heat oil in a pan and add chicken. Cook on a medium heat until the chicken gets tender. Then in frying pan heat cooking oil add grinded peanuts and fry well. Now add it to the chicken and cover for about 3-4 minutes. Then add garam masala powder and lemon juice. Now cover and cook on low heat. Remove and serve hot.
Chicken Tikka Crepes:
Ingredients:
Chicken Boti 1 cup
Oil ¼ cup
Onion (sliced) 1 large
Cheddar cheese 1 ½ cup
For Crepes:
Flour 2 cups
Oil 5 tbsp
Salt 1 tsp
Eggs 3
Milk ½ liter
Method:
For crepes add all the ingredients in a bowl and mix well. Then in a pan add 1 tbsp oil and add 1 cup of mixture. Cook from both sides on medium heat for about 5-6 minutes. Now repeat the process and make crepes. Then add little oil add chicken and onion. Cook for 5 minutes on high heat. Now remove from stove and set aside. Then on crepes add chicken and cheese. Roll it and fry for 2-3 minutes. Serve hot.
Baigan Ka Achar:
Ingredients:
Egg plants ½ kg
Salt 1 tsp
Red chili 1 tsp
Mustard 1 tsp
Turmeric 1 tsp
Green garlic (chopped) 1 tbsp
Water 1 glass
Method:
Boil egg plants along with the stick for about 15 minutes. Then allow them cool down. Now make four cuts on egg plants, don’t separate the stick. Then add salt, red chili, mustard and turmeric. Mix well and add to the egg plants. Now add spiced egg plants in a jar, also add green garlic and water. The achar will be ready in 2-3 days.
