KHAAS SEEKH

Ingredients

200 grams chicken mince
200 grams cottage cheese (paneer), grated
1 tablespoon cornflour
1 tablespoon chopped fresh mint leaves
1 teaspoon green cardamom powder
White pepper powder to taste
2 green chillies, chopped
1 teaspoon finely chopped ginger
1 tablespoon finely chopped garlic
½ teaspoon garam masala powder
½ teaspoon chaat masala + for sprinkling
½ tablespoon ghee
1 tablespoon chopped fresh coriander leaves
1 tablespoon lemon juice
Salt to taste
Oil for grilling
Butter for brushing

Method

1. Mix together cottage cheese, cornflour, mint leaves, cardamom powder, pepper powder and half the green chilli in a bowl.
2. Mix together chicken mince, ginger, garlic, remaining green chilli, garam masala powder, chaat masala, ghee, coriander leaves and lemon juice in another bowl.
3. Wrap portions of cottage cheese mixture onto individual skewers. Cover with portions of chicken mince mixture.
4. Heat some oil in a non-stick grill pan. Place the skewers in it and grill till evenly done from all sides.
5. Cut seekhs into pieces, brush with some butter, sprinkle some chaat masala on top and serve immediately with onion rings and lemon wedges.
