  1. Great veg dishes. However, to veganise I'd change
    ricotta ➡️ blended silk tofu or non dairy yogurt + mix a little sesame paste for creaminess,
    parmesan ➡️ shio koji (femented mix of salt, water and rice koji) + crushed almonds almonds,
    feta ➡️ shio koji or miso femented firm tofu.
    Of course I make these cheaply or are available in Japan, vegan cheese is expensive I can only buy online.

  2. I keep coming back for the summer pasta. So easy. So delicious. But I do forget some of the ingredients at times. (tomato, olives, capers, …, garlic paste) :))

  3. Jamie Oliver is an international treasure. He has shown the world that a great world class chef does not have to be an obnoxious asshole. He has built and runs a restaurant empire that is worth more than all of the other celebrity chefs combined.
