Great veg dishes. However, to veganise I'd change
ricotta ➡️ blended silk tofu or non dairy yogurt + mix a little sesame paste for creaminess,
parmesan ➡️ shio koji (femented mix of salt, water and rice koji) + crushed almonds almonds,
feta ➡️ shio koji or miso femented firm tofu.
Of course I make these cheaply or are available in Japan, vegan cheese is expensive I can only buy online.

I keep coming back for the summer pasta. So easy. So delicious. But I do forget some of the ingredients at times. (tomato, olives, capers, …, garlic paste) :))
