Kashmiri chai :
Ingredients :
Milk 2 cup
Green cardamom 2-3
Soda 2 pinch
Water 2 cup
Kashmiri tea 1-1/2 tsp
Pistachios as required
Sugar as required
Method:
In water green cardamom, soda and Kashmiri tea add and cook for few minutes when remaninhg 1 cup of water then strainer the stock and the 2 cup of milk and whipped well .when change the colour then add sugar and mix .finally remove in pot and add pistachios then serve .

Kashmiri pulao :
Ingredients for stock:
Chicken ½ kg
Mix whole garam masala 1 tbsp
Onion 1 large
Garlic (whole) 1
Whole coriander 1 tbsp
Salt as required
Nutmeg, Mace as required
Ingredients for rice:
Basmati rice ½ kg
Chopped onion 1 large
Ginger garlic paste 1 tbsp
Salt to taste
Yogurt ¾ cup
Whole mix garam masala 1 tbsp
Saffron ½ tsp
Almond, pistachios, raisin, walnuts as required
Clarified butter ¾ cup
Fennel powder 1 tsp
Dry Ginger powder ½ tsp
Method :

Kashmiri Roghan Josh:
Ingredients:
Chicken 750 grams
Kashmiri red chili powder ½ tsp
Cinnamon powder ½ tsp
Small cardamom powder ½ tsp
Black cardamom powder ½ tsp
Cloves powder ½ tsp
Fennel powder ½ tsp
Oil ½ cup
Asafetida powder 2 pinch
Yogurt 1 cup
Whole masala:
Cinnamon 1 small piece
Black cardamom 6
Small cardamom 5-6
Cloves 5-6
Black pepper 7-8
