Gajrela:
Ingredients:
Milk 1-1/2kg
Carrot(grated) 2cups
Rice (boiled) 3/4cup
Sugar 1 cup
Green cardamom 6-7
Butter or clarified butter 2tbsp
Sago pearls 2tbsp
Raisins as required
Almonds as required
Pistachios as required
Sterling silver paper as required
Method:
In milk add and cook green cardamom, sago pearls and boiled rice. After 30mins add graded carrots in it. When it thickens then add sugar . After that fry almonds, pistachios and raisins in clarified butter and add some dry fruits while its cooking. When the gajrella thickens then dish it out and garnish it with pistachios, almonds and sterling silver paper and serve.

Shola:
Ingredients:
Beef mince ½ kg
Onion (finely cut) 2
Ginger garlic paste 1 tbsp
Yogurt ¾ cup
Salt to taste
Red chili powder 1 tbsp
Turmeric ¾ tsp
All spice powder 1 tsp
Oil 1 cup
Tomatoes (boiled& cut) 2
Green gram (boiled) 1 cup
Boiled rice 1 cup
Spinach (finely cut) 2 cups
Wheat porridge 1 cup
Ingredients for garnish:
Green coriander as required
Green chili as required
Ginger (finely cut) as required
Clarified butter for sizzling
Onion 1
Method
Heat oil and fry onion in it. Then add mince, ginger garlic paste, boiled and cut tomatoes, salt, red chili powder, turmeric and yogurt then saute well and add 1 cup water to tender mince. Then saute again. Now add all spice powder, boiled green gram, rice, finely cut spinach and wheat porridge and mix it well then add 2 cups water and cook for another 1-1/2 hour on slow flame. Whisk it again and again after some time and mix it well. Now heat ½ cup clarified butter and fry onion in it. Then give sizzling effect and garnish with green coriander, green chilies and ginger.
