  3. Only 1% of Americans have been diagnosed with celiac disease. If you can eat gluten products do it. Don't just stop because some diet fad said so. How can ages and ages of eat gluten products now be considered a "taboo" food product? This happen once before in the 1960s when people tried to remove fat from their diets. (which is extremely unhealthy) Hopefully this will end soon and people who are blaming obesity on gluten will realise they are not completely correct. We should be a afraid of processed foods, like white flour.

I actually did an experiment with an alveograph (it measures the elasticity,the strenght of the dough and how it will react with heat), using rice flour, cheakpea flour and zea flour( really low gluten flour) and my results were really disappointing. Bit with xanthan gum the diagram of the results was close the gluten doughs. So yes, big thumbs up. But I haven't tasted it….can you tell a difference when you eat it? Also I want to ask, with what kind of flours do you use xanthan gum with? Thank you

  6. how does xanthan gum works, proceeds to demonstrate the difference between xanthan gum + no gluten and normal flower. what is a fallacy since she could have just added a kilo of the xanthan gum and say look it works. (example stevia less then a gram is enough to sweeten a olympic size swimming pool and make it taste sweeter than actual sugar)

    so we got no info on how it works, how much to use and what its made of. better title for this video would have been "look Xanthan gum, good for people who cant eat gluten"

  7. I was googling a little and I found this info on Wikipedia: Xanthan gum may be derived from a variety of source products that are themselves common allergens, such as corn, wheat, dairy, or soy. As such, persons with known sensitivities or allergies to food products are advised to avoid foods including generic xanthan gum or first determine the source of the xanthan gum before consuming the food

  8. I hate using this shit at work. Dont get the gum on your hands with water.. Its like that glue you used to have when you were a kid.
