Ingredients:
Chicken 1 kg
Green Chilli 12
National Chaat Masala 2 tbsp
Tomato 4 (Chopped)
National Ginger Garlic Paste 2 tbsp
Lemon Juice 2 tbsp
Cumin 1 tbsp
Coriander Seeds 1 tbsp
National Salt 1 tsp
Ginger 1 tbsp (Chopped)
Green Coriander 2 tbsp (Chopped)
National Garam Masala Powder 1 tsp
Dried Fenugreek Leaves 1 tsp
Oil 2 Cup for Chicken Fry
Oil 1/2 Cup for Karahi
Coal 1 (Optional)
Direction:
Step 1: Take a pan and add Cumin, Coriander Seeds and slightly roast it and then take a grinder jar and grind it and then add it into Chaat Masala and then add Garam Masala Powder, Dried Fenugreek Leaves and mix it well.
Step 2: Now take a karahi and add 2 cup oil (only for frying) and preheat it and then add Chicken and fry it for 10 minutes from both side, for this cover it with lid and cook it for 5 minutes from one side on medium flame and then remove lid and turn it and fry it from second side with lid for 5 minutes on medium flame.
Step 3: After that remove the lid and dish out the chicken and then add 12 Green Chilli and fry it on medium to low flame with cover for 2 minutes. After that Remove lid and dish out the chillies and After that remove 1 cup oil from karahi and remaining 1/2 cup oil is use for highway karahi gravy.
Step 4: Now add Ginger Garlic Paste and slightly fry it and then add Tomato and stir it and then add salt and stir it and add fried chicken and stir it and cover it with lid and cook it for 10 minutes on medium flame.
Step 5: After that remove lid and add Masala dry batter (from step 1) and stir it and then add Lemon Juice, chopped Ginger, Green Coriander and add fried green chilli (from Step 3) and cover with lid and cook for 5 minutes on very low flame. After that your Highway Chicken karahi is Ready.
