Try this Italian dish with fresh green peas, Arborio rice and fresh mint leaves has a mouth-melting creamy texture and is extremely delicious.
GREEN PEA AND MINT RISOTTO
Ingredients
1½ cups Arborio rice
1 cup green peas
5-6 fresh mint leaves + sprigs for garnish
2 tbsps Nutralite Spread
1 medium onion
1 tbsp finely chopped garlic
3 cups vegetable stock
Salt to taste
2½ tbsps Nutralite Garlic Cheesy Mayo
Edible flowers for garnish
Method
1. Finely chop onion. Heat Nutralite Spread and let it melt. Add onion and sauté till translucent.
2. Add garlic and mix well. Add Arborio rice, mix well and add 1½ cups vegetable stock and mix well. Cook till most of the moisture is absorbed.
3. Put green peas in a chopper and crush coarsely.
4. Add remaining vegetable stock to the rice mixture and mix. Add green peas and mix well.
5. Add salt and mint leaves and mix well. Cook till the rice is cooked and most of the moisture is absorbed.
6. Add Nutralite Cheesy Garlic Mayo and mix well. Take it off the heat and transfer onto a serving plate.
7. Garnish with mint sprigs and edible flowers and serve hot.
