We used to crave for Gajar ka Halwa, all year long till the winter season arrives, so here we have the oncoming winters and the perfect recipe for the quickest and delicious Gajar Ka Halwa.

GAJAR HALWA

Ingredients

4-5 large carrots (gajar), grated
2 tablespoons ghee
3/4 cup milk
1/3 cup sugar
7-8 cashewnuts, chopped+ for garnish
5-6 almonds, sliced+ for garnish
1 teaspoon green cardamom powder

Method

1. Heat ghee in a deep non-stick pan. Add carrots, mix and cook for 10-15 minutes, stirring occasionally.
2. Add milk in a four part, mix well and cook for more 10 minutes on heat medium or cook till the carrots absorb the milk.
3. Add sugar, mix well and cook for 6-7 minutes on a medium heat, add cardamom powder
4. Add ¾ of cashewnuts, ¾ of almonds, cardamom powder, mix well and cook for 1-2 minutes.
5. Serve warm garnished with remaining almonds and cashewnuts.
