A simple and delicious cake recipe for the vegetarians out there!
EGGLESS BISCUIT CAKE
Ingredients
8-10 glucose biscuits
12-15 chocolate biscuits
7-8 tbsps castor sugar
2 tsps chocolate powder
1 tsp coco powder
¾ cup milk
7-8 walnuts, roughly chopped
¼ cup chocolate chips
1 tsp fruit salt
Method
1. In a food processor jar, add glucose, chocolate biscuits and process to a fine powder. Transfer into a large bowl.
2. In the same bowl, add castor sugar, chocolate powder, coco powder, and whisk well.
3. Make a well in the centre and add milk little by little, continuously mixing.
4. Add chopped walnuts and chocolate chips, and mix well.
5. Add fruit salt and mix till well combined. Transfer into a silicon loaf mould.
6. Microwave for 2-3 minutes. Take it out of the oven and allow to come to room temperature.
7. De-mould and cut into slices. Dust with icing sugar and serve.
