Fettuccine Alfredo :
Ingredients:
Fettuccine pasta 1 cup
Chicken boneless julienned 1 cup
Oil 2 tbsp
Garlic chopped 1 tbsp
Spinach boiled and chopped ¼ cup
White pepper 1 tsp
Salt as required
Chicken powder 1 tsp
Oregano ½ tsp
White sauce as required
Cream 2 -3 tbsp
Cheese mozzarella ¼ cup
Pasta dough
Flour 2 cups
Eggs 5
Salt as required
Method
Heat oil and fry garlic. Add chicken fry well. Add spinach and all spices mix well. Add pasta with white sauce mix well. Mix cheese and serve
Pasta dough
Method
In a bowl add flour, egg and salt, knead well. Cover dough for 10 minute. Roll dough into different shapes of pasta and boil them.

Chicken & vegetable soup:
Ingredients:
Chicken minced ½ cup
Oil 2 tbsp
Garlic chopped 1 tsp
Mushroom chopped ¼ cup
Carrot chopped ¼ cup
Salt as required
White pepper 1 tsp
Oregano ½ tsp
Velouté sauce 2 cups
Green onion as required
Method
Heat oil and fry garlic. Add chicken minced and cook for 1 to 2 minute. Add carrot, mushroom and all spices mix well. add veloute sauce cook for 3 to 4 minute. Garnish with green onion.

White Sauce:
Ingredients:
Butter ¼ cup
Flour ¼ cup
Milk 2 cups
Onion 1
Cloves 2 – 3
Method
Heat butter, fry onion. Add flour and cook for 1 to 2 minute. Add milk and cloves cook till sauce becomes thick.

Velouté sauce
Ingredients:
Butter ¼ cup
Maida ¼ cup
Chicken stock 2 cups
Nutmeg powder a pinch
METHOD
Heat butter, add flour and cook for 1 to 2 minute. Add chicken stock, cook till sauce becomes thick. Add nutmeg powder mix well.
