Double Chocolate Chip Cookies:

Ingredients

Chocolate chopped 200gm
Unsalted butter 60gm
Flour 2/3 cup
Baking powder ½tsp
Salt ½tsp
Eggs 2
Brown sugar ¾ cup
Vanilla essence 1 tsp
Chocolate chopped 350gm
Method:
Melt chopped chocolate and butter in a pan and mix until melted. Mix flour, baking powder and salt. Beat eggs, brown sugar and vanilla until light and fluffy. Beat in melted chocolate. Add flour mixture. Mix until just combined. Stir in extra chopped chocolate. Drop tablespoons of dough, 5cm apart, onto silicon lined trays. Bake at 180 degrees c for 12 to15 minutes, rotating trays halfway through, until cookies are shiny and cracked, yet soft in the centre. Cool on trays for 10 minutes. Transfer to a wire rack to cool completely. Serve.

Beef Noodles Stir Fry:

Ingredients

Beef mince 500gm
Plum sauce ½ cup
Soy sauce ¼ cup
Oyster sauce ¼ cup
Mango habanero sauce 1tbsp
Sesame oil 2tsp
Garlic crushed 2 cloves
Ginger grated 2cm
Oil 1tbsp
Green beans trimmed 150gm
Carrots shredded 2
Green onions thinly sliced 2
Rice noodles 350gm
Black pepper to taste
Method
Combine sauces, sesame oil, garlic and ginger in a jug. Heat half the oil. Add beans and carrot. Stir-fry for 2 minutes. Transfer to a bowl. Heat remaining oil in wok. Add mince. Stir-fry until browned all over. Add sauce mixture and half of the onion. Season with pepper. Let mince cook through and sauce thickens and caramelized. Meanwhile, place noodles in a heatproof bowl. Cover with boiling water. Set aside. Return vegetables to wok. Toss to combine. Remove from heat. Drain noodles. Divide noodles among serving bowls. Top with mince mixture. Sprinkle with remaining onion and chilli. Serve.
