Kung Pao chicken:
Ingredients for Marination:
Chicken boneless 250 gm
Salt as required
Soya sauce 2 tbsp
Corn flour 2 tbsp
Oil for fry
Ingredients for Sauce
Oil 2 tbsp
Garlic chopped 1 tbsp
Thai red chili 4-6
Capsicum cubes ¼ cup
Onion cubes ¼ cup
Hoisin sauce 1 tbsp
Chili sauce 1 tbsp
Soya sauce 1 tbsp
Sugar 1 tsp
Salt as required
Roasted peanuts ¼ cup
Chicken stock ½ cup
METHOD
Add chicken, soya sauce and corn flour in a bowl mix well. Heat oil in wok and fry chicken well. add chicken stock, hoisin sauce, chili sauce, soya sauce and sugar in a bowl mix well. Heat oil in wok, fry garlic. Add all vegetables, chicken and sauces cook well. After that add peanut and cook for 1 to 2 minute, dish out and serve.

Homemade Chili Sauce:
Ingredients:
Whole red chilies 170 gm
Oil 500 ml
Salt 20 gm
Sugar 50 gm
Vinegar 20 ml
Method
Boil whole red chilies for 10 to 15 minute and grind well. Add oil in sauce pan then add chili paste. After that add all spices and cook on low flame for 1 hour till oil separate.

Sweet Chili Sauce:
Ingredients:
Thai red chilies sliced 6-8
Oil 2 tbsp
Sugar 1 tbsp
Red chili crushed 1 tsp
Lemon juice 1 tbsp
Chicken powder ¼ tsp
Water ½ cup
Corn flour as required
METHOD
Heat oil in frying pan add thai red chilies. Add sugar, chicken powder, crushed red chilies and lemon juice in water cook for 2 to 3 minute. When boil comes mix corn flour till it becomes thick. Pour on fish and serve.

Thai Chili Fish:
Ingredients:
Fish pomfret 3
Garlic paste 1 tbsp
Salt as required
White pepper 1 tsp
Red chili powder 1 tsp
Soya sauce 2 tbsp
Corn flour 2 tbsp
Oil for fry
METHOD
In bowl mix all ingredient and fish well. Keep in fridge for 1 to 2 hour. Heat oil in wok and deep fry the fish.
