Daal chaat:
Ingredients
Muradabadi Dal:
Yellow split gram 1 cup
Water 2 cups
Turmeric powder ½ tsp
Clarified butter 1 tsp
Salt to taste
Toppings:
Ginger, julienned 1 tbsp
Green chilies chopped 2 tbsp
Onion chopped 1
Tomatoes chopped 2
Radish, grated ¼ cup
Papdi 2 cups
Lemon juice 2 tbsp
Chaat masala 1 tbsp
Butter 2 tbsp
Mint coriander chutney 4 tbsp
Coriander leaves few
Mint leaves few
boondi (chickpea flour droplets) handful
Red chili and garlic chutney as required
Muradabadi daal masala 2 tbsp
Muradabadi Daal Masala:
Cloves 6
Dried red chilies 5
Black peppercorns 1 tsp
Coriander powder 1 1/2 tbsp
Mint Chutney:
Mint leaves 1/4 cup
Coriander 1/4 cup
Green chilies 1 tbsp
Ginger 1 inch
Lemon 1/2
Cumin seeds 1/2 tsp
Garlic 4 cloves
Method :
Rinse well and soak the yellow split daal in water overnight or for atleast an hour and discard the water. Add the daal into a pressure cooker with water and salt, turmeric and ghee and cook till daal is done. Blend the daal. For the Muradabadi Dal Masala, dry roast and when cool, grind all the ingredients. For the Mint Chutney, grind all the chutney ingredients. To assemble the Chaat, heat the daal to a boil, just before serving. Crush papdi and ladle in the daal. Add a little bit of every topping on top and serve. Top with more butter and Muradabadi daal masala.
Fruit Cream:
Ingredients:
Fruits in season 2 cups
Cream ½ cup
Condensed milk ¼ cup
Method:
Mix all the fruits in a bowl. Mix in the cream and condensed milk. Serve chilled.
Cold Coffee:
Ingredients:
Coffee 2 tbsp
Milk 2 cups
Ice as required
Method:
In a blender add all the ingredients and blend well. Lastly serve.
