A delectable Italian Dish , this creamy mushroom risotto will capture your taste buds and increase your appetite by tenfold in the first spoonful itself!

CREAMY MUSHROOM RISOTTO

Ingredients

1 cup Arborio rice
8-10 button mushrooms, sliced
10-12 shimeji mushrooms, roughly chopped
50 grams enoki mushrooms, chopped
1 tablespoon olive oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
2 tablespoons white wine (optional)
4 cups vegetable stock
Salt to taste
2 sprigs fresh thyme + for garnishing
1 teaspoon fresh cream
1 teaspoon butter
2 tablespoons grated parmesan cheese

Method

1. Heat olive oil in a non-stick pan. Add garlic and sauté till golden brown.
2. Add onion, mix and sauté till translucent. Add button, shimeji and enoki mushrooms, mix well, and cook for 4-5 minutes.
3. Add Arborio rice, mix well and cook for 3-4 minutes. Add white wine, stock and salt, stir to mix and simmer for a few minutes.
4. Add thyme, mix well, cover and cook for 10-15 minutes. Add cream, butter and parmesan cheese and mix till the cheese melts.
5. Garnish with a thyme sprig and serve hot.
