A vada-pav with a crunchy twist.

CHURA VADA PAV

Ingredients

4-5 medium potatoes boiled, peeled and mashed
2 tbsps oil
1 tsp mustard seeds
5-6 curry leaves, chopped
1ΒΌ tsp turmeric powder
Salt to taste
1 tbsp chopped fresh coriander
1 tbsp green chilli coriander garlic paste
1 cup gram flour (besan)
A pinch of baking soda
Tamarind chutney as required
Green chutney as required
Vada pav chutney as required
1 medium onion, chopped
1 tbsp chopped fresh coriander

Method

1. Heat oil in a non-stick pan, add mustard seeds and sautΓ© till it splutters. Add curry leaves. SautΓ© for few seconds. Transfer tempered mixture into a bowl with mashed potatoes. Add 1 tsp turmeric powder, salt, chopped coriander and green chilli coriander garlic paste. Mix well. Set aside.
2. Divide mixture into ball sized portions and take besan in a bowl. Add a pinch of baking soda, salt, remaining turmeric powder and sufficient water to make a semi thick batter. Mix well.
3. Heat sufficient oil in a non-stick kadai, dip each vada in batter, coat well and add in kadai and deep fry on medium heat till 3/4th done. Remove and set aside.
4. Remove vadas on a plate.
5. Add batter in kadai to form crispy churas and add the ΒΎ th done vadas. Deep fry till done on medium heat. Drain on an absorbent paper.
6. Slit 2 pavs into half. Apply tamarind chutney, green chutney, vada pav chutney. Place vadas , add vada pav chutney, chopped onions, churas, tamarind chutney, remaining green chutney, remaining vada pav chutney and coriander.
7. Serve hot.
