Freshly baked hot cross buns with the addition of chocolate. Do try !

CHOCOLATE HOT CROSS BUNS

Ingredients

2¾ cups refined flour (maida)
½ cup cocoa powder
1 tablespoon fresh yeast
3½ tablespoons castor sugar
A pinch salt
¼ teaspoon nutmeg (jaiphal) powder
1 teaspoon cinnamon powder
1½ cups milk
30 grams butter, melted + for basting
Dark Chocolate
1 sprig rosemary
Maple syrup as required

Method

1. Sift 2 cup refined flour and coco powder, mix well.
2. Take yeast in a bowl and castor sugar and 2 tablespoon warm water, mix well and set aside to activate.
3. Add sugar, salt cinnamon powder and nutmeg powder to the dough and mix well. Make well in centre, add activated yeast and milk and knead into soft dough.
4. Apply butter on the dough and knead well.
5. Divide the dough into small equal portions. Place a piece of chocolate in the center and shape the portions of dough into balls.
6. Use a sprig of rosemary to grease the baking tray with butter. Dust with flour.
7. Place the dough balls on a baking tray, cover with a damp muslin cloth and set aside to prove for 20-25 minutes.
8. Preheat oven at 180c.
9. Take remaining refined flour in another bowl. Add water and mix well to get a thick slurry.
10. Fill a piping bag with slurry and pipe out on the proved buns to make a cross
11. Put the baking tray in preheated oven and bake for 10-15 minutes.
12. Use the rosemary sprig to basting the buns with butter and maple syrup.
13. Remove from oven and cool.
14. Serve.
