CHIMICHURI PRAWNS

Ingredients

250 grams medium prawns, shelled and deveined
ΒΌ small bunch fresh coriander leaves
8-10 sprigs fresh parsley
5 garlic cloves
3-4 tablespoons white wine vinegar
Salt to taste
ΒΌ cup + 2 tablespoons olive oil
Juice of Β½ lemon
1 teaspoon red chilli flakes + for sprinkling
Crushed black peppercorns to taste

Method

1. Blend together coriander leaves, parsley, garlic, white wine vinegar, salt, ΒΌ cup olive oil and lemon juice to a paste.
2. Heat remaining olive oil in a non-stick pan. Add prawns and toss. Add prepared paste and mix well.
3. Add 1 teaspoon chilli flakes, crushed peppercorns and salt, mix well and cook till fully done.
4. Sprinkle some chilli flakes and serve hot.
