Chicken Shawarma Sandwich:
Ingredients for Chicken:
Fenugreek powder 2 tsp
Cumin 1 tsp
Allspice 1 tsp
Black pepper 1 tsp
Cinnamon 1 tsp
Nutmeg 1 tsp
Ginger powder 1 tsp
Cardamom 1/2 tsp
Ground cloves 1/2 tsp
Salt 1/2 tsp
Lemon juice 3 tbsp
White Vinegar 2 tbsp
Minced Garlic 2 tbsp
Chicken breasts, cubed ½ kg

Tahini Sauce:
Yogurt 1/2 cup
Tahini 1/4 cup
Lemon juice 1/4 cup
Chili sauce 1 tbsp
Garlic, minced 5 cloves
Sugar 2 tsp

Remaining Ingredients:
Pita bread as required
Shredded lettuce as required
1 Tomato sliced 1
1 Cucumber sliced 1
1 onion sliced 1

Method :
Marinate the chicken with lemon juice, vinegar and garlic. Leave overnight in fridge. For the tahini sauce, whisk all the ingredients together. Grill the chicken breasts in very little oil, until no longer pink in the center. To serve sandwiches, fill pita bread with lettuce, chicken, tomato, cucumber, and onion, and top with tahini sauce.

Kalakand:
Ingredients:
Condensed milk 400 gm
Cardamom powder 3/4 tsp
Rose water 1 tsp
Crushed cashews 10 gm
Grated cottage cheese 250 gm
Sugar 1 tbsp
Crushed pistachios 10
Saffron 8 strand
Method :
Take a thick-bottomed pan and pour the condensed milk into it. To it, add grated paneer and mix well. Add some sugar and keep the flame on low. Simmer the kalakand mixture and stir it often so that the milk does not stick to the pan. After the mixture starts to thicken, and you see a thick mass, remove from the flame and stir in the cardamom powder. Garnish with dry fruits and allow the mixture to cool. Grease a plate or a thali with some oil and transfer the kalakand mixture onto it. Even out the surface with a spatula. Gently sprinkle and press the dry fruits onto the surface of the kalakand. Now, allow the kalakand to cool at room temperature and then leave it in the refrigerator for it to set. Slice the kalakand into desired shapes.
