“CHICKEN SHASHLIK WITH CHINESE FRIED RICE”

 

*Ingredients Of Chicken Shashlik*

 

300 gm. chicken in cubes

Half cup House of Italaya Olive Oil

2 capsicum, cut in cubes

2 tomatoes, remove seeds and cut in cubes

2 onions, cut in cubes

1 tbsp. corn flour

2 tbsp. garlic and ginger paste

2 tbsp. ketchup

2 tbsp. chili garlic sauce

2 tbsp. Worchester sauce

1 tsp. red chili powder

1/2 tsp. black pepper powder

1/4 tsp. white pepper

Salt to taste

 

*Shashlik Gravy*

 

4-5 cloves garlic, chopped

1 tbsp Italaya olive oil

1 cup tomato puree

2 tbsp. chili garlic sauce

1 tsp. crushed red chilies

2 tbsp. soya sauce

2 tbsp. Worcestershire sauce

2 tbsp. tomato ketchup

Salt to taste

1/2 cup chicken stock

2 tbsp. corn flour

 

*Method Of Chicken Shashlik*

 

Marinate chicken with garlic paste, tomato ketchup, chili garlic sauce, Worchester sauce, salt, black and white pepper, chili powder, oil and corn flour. Set it aside for 1 hour.

 

Take shashlik sticks, Thread onion piece, then chicken cube, capsicum and then chicken again,tomato and then chicken. Put all vegetables and chicken on sticks in this manner. Or you can simply put mrinated  chicken in a pan as for gravy method i did. 

Now in a pan heat the oil and fry these sticks or cubes. Cook covered for 5-6 minutes on low flame.

 

For Sauce, heat oil and sauté garlic in it. Add tomato puree, chili garlic sauce, tomato ketchup, red chili flakes, salt, soya sauce, Worcestershire sauce. Cook for 3-4 minutes.

Now add chicken stock. Dissolve corn flour in water and then add it in sauce and cook till it thickens.

 

*Ingredients for Chinese fried rice*

 

Boiled rice 300g

Eggs 3

Italay Oil 1/2 cup

Spring onions 2

Garlic 3-4 cloves

Button mushrooms 1 cup

Finely chopped capsicum 1

Finely chopped carrots q

Black mushrooms 3-4

Boiled peas 1 cup

Worcestershire sauce 2 tbsp

Oyster sauce 2 tbsp

Crushed black pepper 1 tsp

Black pepper powder 1/2tsp

Chinese salt 1 tsp

Salt as required

 

*Method for rice*

 

Heat ½ cup oil in a  wok and add 3-4 cloves of garlic. Fry until golden brown in color.

Add 2 beaten eggs and cook until set.

Add 1 cup button mushrooms, 3-4 black mushrooms, 1 chopped capsicum, 1 chopped carrot, 1 cup boiled peas and 2 chopped green onions. Mix well and add the boiled rice.

Add salt as required, 1tsp crushed black pepper, 1/2tsp black pepper powder, 1tsp Chinese sat, 2tbsp Worcestershire sauce and 2tbsp oyster sauce.

 

Toss well to mix and serve hot.
