Chicken Karahi Dhaba Style :
Ingredients for marination :
Chicken large pieces 600 grams
All spice powder ½ tsp
Kashmiri red chili 1 tsp
Crushed red chili 1 tsp
Crushed black pepper ½ tsp
Salt as required
Yogurt 2 tbsp
Ingredients for garnishing:
Green chili as required
Capsicums in cubes as required
Onion cubes as required
Ingredients for masala:
Mustard oil ¾ cup
Chopped onion 1
Whole red chili 8-10
Tomatoes 3
Bay leaves 1
Ginger garlic paste 1 tbsp
White cumin 1 tsp
Salt as required
Lemon juice 1 tbsp
For karahi masala:
Whole coriander 2 tbsp
White cumin 1 tbsp
Whole red chili 6-8
All spice masala 1 tsp
Dried fenugreek 1 tsp
Cayenne red chili 1 tsp
Turmeric ½ tsp
Crushed black pepper 1 tsp
Salt as required
Method:
All marination ingredients mix in chicken pieces and leave for 2 to 3 hours .now heat mustard oil add bay leaves ,white cumin and whole red chili and mix .now add chicken and fry then remove and in the same oil fry onion and ginger garlic paste ,tomatoes and salt and roast well .then fry chicken and mix well then add 1-1/2tbsp karahi masala ,lemon juice ,green chili ,capsicums and onion add then roast well .finally garnish with green chilies ,capsicums cubes and onion cubes and serve .

Fry Aalu :
Ingredients:
Chopped potatoes (large) ½ kg
Oil for frying
Chaat masala 1 tsp
Crushed cumin ½ tsp
Finely cut green coriander as required
Method:
boil the potatoes without peel .when cool it then then keep in hand and press in between then heat oil and fry .when crispy then remove it .then add chaat masala ,crushed cumin and garnish with green coriander and serve .

Channay Ki Daal Fry :
Ingredients:
Boiled gram lentils 2 cup
Chopped ginger 1 tbsp
Boiled chopped tomatoes 2
Salt, turmeric as required
Red chili powder as required
Green coriander for garnishing
Clarified butter 2 tbsp
All spices powder ½ tsp
Chopped green chili 2
Lemon juice 1 tbsp
For oil tempering:
Clarified butter 4 tbsp
Whole red chili 3-4
Cumin ½ tsp
Onion slices 1
Dried fenugreek 1 tsp
Method:
Boil the gram lentil with salt .then heat clarified butter and chopped ginger and fry lightly .then add boiled and chopped tomatoes ,salt ,red chili powder and turmeric add and roast well .then add boiled lentils ,all spices powder ,onion slices and dried fenugreek and half cup of water add and cook .finally add green chilies and lemon juice .for tempering heat clarified butter and add whole spices and cumin and fry then add in lentil .finally garnish with green coriander and serve .
