Chicken Egg Salad Sandwich:
Ingredients:
Chicken breasts, cooked and chopped 2
Eggs, boiled and chopped 2
Celery, minced 2 stalks
Chopped onion 2 tbsp
Chopped green chili 1 tbsp
For The Dressing:
Tabasco sauce a dash
Salt 1 tsp
Black pepper 1⁄2 tsp
Sugar 2 tsp
Mayonnaise 1 cup
Salad leaves as required
Bread to serve
Method:
Combine all ingredients except the dressing. Add dressing. Chill. Serve on bread
Date Lemon Pulao:
Ingredients:
Oil 2 tbsp
Potatoes 2 diced
Corn 1 cup
Capsicum 1
Whole spices 1 tbsp
Cumin 1 tsp
Redchilies powder 1 tsp
Ginger garlic paste 1 tsp
Finely chopped onions 2
Slit green chilies 2
Ginger 1
Tomato paste 1 tbsp
Red chili powder 1 tsp
Turmeric ½ tsp
Finely sliced lemons 2
Rice 1 ½ cups
Salt 1 tsp
Black pepper powder 1 tsp
All spice powder 1 tsp
Lemon juice 1 tbsp
Chopped tomato 1
Sliced dates 8-10
Raita:
Cucumber grated 1
Salt a pinch
Yogurt 1 cup
Cumin seeds ½ tsp
Method:
In oil cook finely diced potatoes, then add corn and capsicum. Remove and set aside. In same pan add the whole spices and cumin and red chilli and let crackle. Add in ginger garlic paste and finely chopped onions, slit green chillies and ginger and saute. Add tomato paste, red chili powder and turmeric and continue stirring. Add finely sliced lemons, salt and washed and soaked rice. Add enough water, black pepper powder, all spice powder and a tbsp of lemon juice. Allow water to come to boil add a fine chopped tomato and gently stir the rice and allow to boil. As the water gets absorbed put sliced dates on top and let the pan simmer slowly till rice is cooked. Add in the earlier cooked vegetables. Simmer for a while on low and fluff up the rice carefully and serve hot with raita. To make the raita, mix all ingredients well chill and serve.
