Spinach and chicken mince mixture shaped into tikkis and shallow fried, stuffed into burger buns to make these delicious wholesome sliders.
CHICKEN AND SPINACH SLIDERS
Ingredients
1 cup chicken mince
10-12 fresh spinach leaves
1 tsp crushed garlic
6-8 pickled jalapenos
Salt to taste
¼ cup toasted white sesame seeds (safed til)
8 small brown burger buns
1 tbsp oil
4 tbsps hung yogurt
Salt to taste
Alfalfa sprouts for garnishing
Method
1. Roughly chop spinach leaves and put in a mixer jar, add chicken mince, garlic, pickled jalapenos and salt and grind. Add toasted sesame seeds and grind again to a coarse paste.
2. Slit burger buns into halves. Toast the buns in a non-stick pan.
3. Dampen your palms in water and divide the mixture into equal portions, shape each into a ball, flatten to make tikkis.
4. Heat oil in a non-stick pan and cook the tikkies, turning sides, till equally golden and crisp on both sides.
5. Combine hung yogurt and salt in a bowl and mix well.
6. Spread the yogurt mixture on each burger bun halves, place a tikki in center, top with yogurt mixture and alfalfa sprouts and serve immediately.
