Cheesy Salsa Chicken Casserole:
Ingredients:
Chicken boneless fillets 750 gm
Salt 2 tsp
Black pepper powder 1-1/2 tsp
Garlic powder 1 tsp
Oil ½ cup
Barbecue sauce 1-1/2 tsp
Cheddar cheese ½ cup
Mozzarella cheese1 cup
Ingredients for salsa:
Finely chopped tomato 1 cup
Finely chopped onion 1 cup
Chili garlic sauce 6 tbsp
Lemon juice 1 tbsp
Green coriander chopped 4 tbsp
Jalapenos 1 tbsp
Method:
Apply marinate ingredients on chicken and left for 3-4 hour. Remove grill in grill pan. Dish out in glass dish. Mix all ingredients of salsa and left for 1 hour. Add in chicken and spread cheese. Sprinkle green coriander. Bake in preheat oven till cheese melt. Serve with boil rice.
Carrot Cake Muffins:
Ingredients:
Carrot (grated) 1-1/2 cup
Sugar as required
Plain Flour 1-1/2 cup
Baking Soda 1 tsp
Baking Powder 1/2 tsp
Cinnamon Powder ½ tsp
Eggs 2
Oil ½ cup
Pepper Cups as required
Vanilla Essence ½ tsp
Salt ¼ tsp
Butter 4 tbsp
Walnuts ¾ cup
Ingredients of Cream Cheese Icing:
Cream Cheese ¾ cup
Sugar Powder 2-3 tbsp
Vanilla Essence few drops
Method:
In a bowl, add plain flour baking powder, baking soda, cinnamon, salt , sugar and mix.
In a bowl add eggs and beat well, add butter and oil then add dry ingredients.
After this, add vanilla essence and carrot.
Now in a muffin tray , put muffin cups and pour the mixture.
Bake it 200 c for 20 to 25 minutes.
For cream cheese.
In a bowl add all the given ingredients and mix.
When muffin tray are done, pour icing mixture and garnish with walnuts.
